oh yes i  do have today’s 5 kitchen tips and helps…..

 

5 KITCHEN TIPS

  1. Place a wooden spoon over boiling water to keep it from boiling over. There is a lot of science behind this, but the easiest way to explain why this works is because the spoon pops a lot of the bubbles once they come into contact with it, and it also absorbs some of the moisture. Apparently, metal spoons don’t work because they heat up too fast. It’s worth a try!
  2. Water that has been boiled and allowed to cool will freeze faster than water from the tap.
  3. To clean crevices and corners in vases and pitchers, fill with water and drop in two Alka-Seltzer tablets. The bubbles will do the scrubbing.
  4. After boiling pasta or potatoes, cool the water and use it to water your house plants. The water contains nutrients that your plants will love.
  5. Baking soda is an extremely effective cleaner, Use it with vinegar to deodorize drains and clean stove tops and sinks.

OAT MEAL

Today’s Recipe is all about Oatmeal.

I  personally eat Oats for its taste and nutrition and many other benefits, after all Nothing says “good morning” like a warm bowl of oatmeal.

Whether slowly cooked and creamy or blended with fresh fruit in a smoothie, oats provide your body with many benefits.

If you’ve tried oatmeal before and didn’t like it, reconsider. I shall show you two Methods/ways to enjoy OATS.. the first is as a Porridge and the other a typical African Swallow.

Oat meal is  really healthy.. so let’s start off with some health benefits….

 

Health Benefits of Eating Oats

  • Oats are rich in a specific type of fiber called beta-glucan. This particular type of fiber is known to help lower levels of bad cholesterol.
  •  Oats Provides high levels of fiber, low levels of fat, and high levels of protein.
  • Oatmeal is a source of fiber. That means when you eat oats for breakfast, you’re going to feel full for a long time and stops cravings which helps control your weight.
  • Oatmeal is a whole grain, and eating whole grains can lower your risk for several diseases, including high blood pressure and type 2 diabetes.
  •  Oatmeal Enhances immune response to disease.
  • It tastes good!

 

Okay lets get to this recipe Already…

For the first method, A steaming bowl of fresh cooked oatmeal is the perfect way to start your day.

WHAT YOU WILL BE NEEDING (INGREDIENTS)

1/3 cup old fashioned oats oatss
1 cup waterwater 2
Pinch of salt(optional)salt

 

 

METHODS &PREPARATION.

1.    Boil some water in a pot..
2.    Put some oats in a bowl and add some water (just enough to cover the oats)  let it sit for a bit.
3.   Add the soaked oats to the boiling water.
4.    Add your salt.(if desired)
5.    Bring to a boil then turn heat down and simmer, stirring frequently till thick, adding more water if necessary.

 It’s  that simple;simply put all of the ingredients in a pot, bring to a boil, turn heat down and simmer, stirring frequently till thick, adding more water if necessary.

If you’re not eating oatmeal for breakfast, you’re missing out on a delicious way to add fiber.

 

 

Now the Second method, still using the same ingredients.

METHODS &PREPARATION.

  1. Blend oats with a little bit of water in a blender.
  2. place a pot on the stove.
  3. now add the blend into the hot pot and stir the mix just like you’d normally with your African swallows.
  4. stir mixture on the stove with a wooden spoon  until it thickens.

And there you have it. this could be served as lunch and enjoyed with any soup you desire. I had mine with Okoro soup and yes it was Yummy!!!

Tips/Take away

  • Studies have shown that 1 bowl of oatmeal a day (3 grams of soluble oat fiber) typically lowers total cholesterol by 8-23%.
  • Combining fruit or nuts with your oats while they’re cooking adds more nutrients.
  • Spices like cinnamon and nutmeg give great flavor to your oats.
  •  Limit any sugars and let the natural flavor of the fruits and spices take over.
  • try to find a different way to eat it every day.

I bring you another Yam Recipe. Todays’s Recipe is  all about Asaro  also known as Yam Pottage.

For those that know how to prepare this dish , join the conversation and for those that don’t; welcome to the conversation and this recipe is just for you…..

First, let ‘s start off with the Nutritional Facts of eating Yam.

NUTRITIONAL FACTS OF YAM.

  • Yams are rich in carbohydrate.
  • Yam is also a good source of energy, Its crunchy edible tuber chiefly composed of complex carbohydrates and soluble dietary fiber.
  • The Fresh root of Yam also contains good amounts of anti-oxidant vitamin; vitamin-C.  Vitamin C play some important roles as anti-aging, immune function booster, wound healing, and bone growth.
  • Yam also contains small amounts of vitamin-A.Vitamin A has many functions like maintaining healthy mucus membranes and skin, night vision, growth and protection from lung and oral cavity cancers.

Okay lets get to the recipe Already…

 

WHAT YOU WILL BE NEEDING (INGREDIENTS)

  1.  1 tuber  of Yam (chopped).yam
  2.  crayfish.ground crayfish
  3. smoked fish.smoked fish
  4. blended pepper &tomatoes.blended
  5. seasoning.seasoning
  6. 2 cooking spoons Palm oil.palm oil
  7. water.water 2
  8. A small bunch of Spinach (optional)
  9. Salt to taste.salt
  10. 1 table spoon of  crushed dry pepperdried pepper
  11. 1 cup of chopped spinachchopped spinach

 

METHODS &PREPARATION.

STEP 1.

Cut, peel and wash the yam into medium sized chunks,Place  yam in a pot, add water and bring to a boil.when it starts boiling,  Add salt, dry Pepper, seasoning,blended pepper and tomatoes  and then leave to boil until the yam is nice and soft. ( you could pierce the yam to test for softness)

STEP 2.

Add dry crayfish , you could also add cow leg, chicken if desired. leave to cook for another 5 minutes.

STEP3.

Add the palm oil and let it cook for another minute or two. after which you add your Spinach if you desire and let it simmer for another minute on low heat.

 

 

METHOD 2.

STEP 1

The other method is simply to set the boiled yam aside in step 1.

STEP 2.

Heat the palm oil in a separate pan add  the blended pepper and tomatoes
Fry for a few minutes whilst continue stirring .Now add the dried fish,the seasoning and the shredded spinach(if desired) and stir.

STEP 3.

Now Pour the fried palm oil mixture into the pot containing the boiled yam, add the ground crayfish and some salt if needed.  stir and let it simmer for 2 -3 minutes. you want a thick  mixture. you could also mash some of the chunks of yam into the mixture this makes it thick as well.

And your yam Pottage is all ready to be served.

 

Now to Serve 

Asaro could be enjoyed with Fish, Beef or Snails .

some people like to add all kinds into their meal and thats okay. you could add chunks of beef, cow leg or shredded chicken along with your stock fish.This is completely up to you.

Todays Tips.

Some people like to add Sugar to sweeten their pottage, I personally don’t. A better healthier option would be adding chunks of sweet potato to the pottage.

Remember that sweet potato cooks faster than yam so it should come in after the Yam has softened  a bit. preferrably After step 1

Here are some Kitchen Tips and Tricks for today…. I do hope they come in handy sometime…

 

Today’s Tips

  1. If you are making gravy and accidentally burn it, just pour it into a clean pan and continue cooking it. Add sugar a little at a time and keep tasting as you go along  to avoid over-sugaring it. The sugar will eventually  cancel out the burned taste and you could enjoy your gravy.
  2.  You Burned a pot of rice? Just place a piece of white bread on top of the rice for 5-10 minutes to draw out the burned flavour from the rice. Be careful not to scrape the burned pieces off of the bottom of the pan when serving the rice.
  3. If your salt is clumping up, put a few grains of rice in with it to absorb excess moisture.
  4. If your milk always goes bad before you  finish it, try adding a pinch of salt to the carton when you first open it. It will stay fresh for days longer.
  5. Do not store your bananas in a bunch or in a fruit bowl with other fruits. (banana is a Diva lol!)  Separate your bananas and place  in a different location.  this is because Bananas release gas which cause fruits  to ripen quickly. Separating them helps keep them fresh longer.

IKOKORE (Water -Yam Pottage)

From my Mama’s Kitchen to your Kitchen, I bring you IKOKORE.

Ikokore is a delicious Western Nigerian Delicacy  made with grated water yam.

Water yam, has a lot of health benefits which I shall list below.

Health Benefits Of Water Yam

  • Water yam belongs to the family of dioscorea alata specie of yam, a tuberous root vegetable. It also has many different names in different countries and regions.
  • Nutritionists say that Water yam can slow down the ageing process and also boost our immune system.
  • Water yam contains  fibre, a substantial amount of antioxidants and Vitamin C.( it is healthy enough for diabetic patients)
  • The fresh roots of water yam contain good amount of antioxidant and Vitamin C. The vitamin C in water yam plays so many roles in anti-ageing, immune function,  and bone growth.
  • Water yam is also a good source of the Vitamin B complex .

 

I love love this dish, its easy to make,  it does not have a long prep time and it is absolutely delicious..

Okay lets get to it Already…

 

 

WHAT YOU WILL BE NEEDING (INGREDIENTS)

  • 1 medium water yam.(ISU EWURA)IMG_4685
  •  2 table spoon Dried Pepper.dried pepper 2
  •  1 medium size Dried Fish ( Preferably “Sawa”) roasted Herring Fishdried fish
  • Ogiri ( african maggi) / magi cubes-Ogiri is a flavoring made of  Fermentes Oil Seeds, such as Sesame Seeds or Egusi Seeds. The process and product  of Ogiri are similar to Iru(locust beans) . Ogiri also smells  like Cheese.
  •  100ml Palm oil
  • Ground Crayfish (optional)ground crayfish
  • salt  to tastesalt
  • 1 1/2 cup of Water.

 

 

METHODS &PREPARATION.

STEP 1.

Peel the water yam, cut into medium chunks( this makes it easy to grate), wash thoroughly and then grate the yam into a clean bowl.

STEP 2.

put some  water in a clean Pot, add Dried Pepper ,Dried fish and magi cube if desired. allow this to come to a boil and then add Ogiri.

STEP 3.

Add some salt to the grated water yam and beat  thouroughly using your hands.

STEP 4.

Now  turn the heat down and scoop  small portions of the water yam into the boiling soup with your hands to form dumplings. ( careful not tomato a splash and thereby hurt yourself).

STEP 5.

Now add palm oil and salt to taste and place the lid on the pot.

STEP6.

Allow to cook for 10-15 minutes and then enjoy your meal.

Now to Serve 

Ikokore could be enjoyed with Fish, Beef , Snails or even with Cold Eba.

TIPS:

water yam is slimy so apply caution whilst grating so as not to hurt yourself. hence the advice of cutting the yam in large chunks not small bits.

Pay attention whilst cooking to ensure your dried fish and al does not stick to the bottom of the pot.

Also, you don’t need to stir the ikokore while cooking,  Just allow it cook.

 

 

Kitchen Tricks:Peeling garlic in seconds

Hello From my Mama’s Kitchen…..

OK, people, this trick is pretty important as i got a couple of messages asking the best and stress free way to peel Garlic.

so, If you were in the dark about this too, it is indeed time to see the light. you don’t have to peel garlic with a  knife and get the skins all stuck under your finger nails and  all.you also don’t need your hands to smell of garlic for days.

here are two easy techniques ; the first is with water and the other is not…

they both work amazingly might i add.

Let me just tell you about this. You will be amazed.

 

How to peel a whole garlic in Seconds

Here’s what you do:

First you Place a full head of garlic into a  clean bowl.

Secondly, Place another  bowl (same-sized bowl) over top to create a Dome for the Garlic.

Now, hold on to the two sides of the bowl and shake it.  you could shake it vigorously for about 17- 20 seconds depending on how strong you are .. lol!! shake it until you have achieved the desired result.

Here’s what happened! Really! It all just kind of falls apart and the skins fall off without even touching a knife.

The Second method 

for this technique,  all you have to do is SMASH, SHAKE, and SEPARATE! ( i know rite!! it sounds fun already).

However, The hard surface might work more efficiently than tupperware/plastic in breaking  the garlic apart . At the end of the day he choice is yours , so whatever works best for you is what you choose.

Today’s tips

  1. Before you chop chili peppers, rub a little vegetable oil into your hands and your skin won’t absorb the spicy chili oil.
  2. If you aren’t sure how fresh your eggs are, place them in about four inches of water. Eggs that stay on the bottom are fresh. If only one end tips up, the egg is less fresh and should be used soon. If it floats, it’s past the fresh stage.
  3. When defrosting meat from the freezer, pour some vinegar over it. Not only does it tenderize the meat; it will also bring down the freezing temperature of the meat and cause it to thaw quicker.
  4. If your loaf of bread is starting to go stale, just put a piece of fresh celery in the bag and close it back up. For some reason, this restores a fresh taste and texture to the bread.
  5. To reuse cooking oil without tasting whatever was cooked in the oil previously, cook a 1/4″ piece of ginger in the oil. It will remove any remaining flavors and odours.
