Just as cleaning your body’s exterior has many benefits (fresher-looking skin, removing bacteria, improving your scent), cleansing and detoxifying the body on a consistent basis offers many health benefits. which helps to :

HOME MADE “BREAD CRUMBS”

 

Holla!! from my mama’s kitchen … to your kitchen….

I did say i would put up the bread crumbs recipe in the Scotch egg post. so here it is…. and if you missed that post, click here for the scotch egg recipe.

There is nothing like homemade bread crumbs to  spice up your dish when required. Fresh homemade bread crumbs  in my opinion tastes way better than store bought bread crumbs. Besides, it also costs less and they are so easy to make.

Basically, You could  use any type of bread  you have available (white, wheat, rye, etc.)  There is also nothing wrong with combining various types breads. it is totally up to you what taste you are going for.

Okay lets get to it Already…it is pretty straight forward.

 

 

WHAT YOU NEED TO DO IN 4 STEPS

STEP 1.

You need to use dry bread only. If you bread is too fresh, just bake fresh bread slices in a slow oven a oven until slightly dry.

STEP 2.

place bread piece/slices on an ungreased baking sheet. Bread pieces will dry faster and evenly when they are laid out in a single layer, rather than when the pieces are stacked; allow a bit of room between pieces to dry properly.

Bake in a 300 degree F. oven for approximately 10 to 15 minutes. About halfway through, turn them over so they dry evenly. Remove from oven and  allow them cool.

STEP 3.

Tear dried bread into smaller pieces and place in your food processor. Whirl until desired coarseness.

STEP 4.

Alternatively, you could Place dry bread slices in a resealable plastic bag, and using your rolling-pin or a large drinking glass, roll over the top of the plastic bag and crush bread until desired coarseness. you could also use a Mortar and pestle to achieve desires coarseness.

 

 NOTE

Please, do NOT use stale bread in this process. Stale bread makes for stale tasting breadcrumbs. You need to use dry bread only. If you bread is too fresh, just bake fresh bread slices in a slow oven an oven until slightly dry.

 

TIPS:

  • You could store your odds and ends of bread in a large re-sealable plastic bag in the freezer until ready to make your homemade bread crumbs.
  •  If  you need finer crumbs, just regrind the amount needed  until you achieve desired result.

 

Scotch Eggs

We are making Scotch eggs today…… yay!!!

Scotch eggs are a common picnic food. Several local variations exist in different parts of the world.

I love this snack ( i have fun memories), I love eggs too and Scotch Egg is simply an interesting way to enjoy eggs.

I remember my favorite part whenever my mum made this, was rolling the eggs in the bread crumbs…

The Nigerian Scotch Egg is the Scottish version of the scotch egg, with a little twist.

Okay, let’s get to this yummy recipe already…..

WHAT YOU WILL BE NEEDING (INGREDIENTS)

 

  1. 2 cups of multi purpose flourFlour
  2. 250g Sausage Meat (satis meat)sausage meat
  3. boiled eggs.boiled egg
  4. 1 raw egg, beatenbeaten raw egg
  5. A pinch teaspoon salt.salt
  6. 3 teaspoon butter.butter
  7. 1 1/3 litre groundnut oil(for frying).vegetable Oil
  8.  50g Dried Breadcrumbsdried bread crumbs

 

 

METHODS &PREPARATION.

 

STEP 1.

Place the minced sausage meat into a  clean bowl,add your preferred seasoning, nutmeg, (optional) black pepper and salt. Mix thoroughly until all the ingredients are well incorporated .

 

STEP 2.

Boil and peel the eggs. set this aside.

 

STEP 3.

Now take some of the minced meat and flatten it on your palm or on a flat surface.
Roll the hard boiled egg on the flour and then place it on the flattened meat on your other palm. Coat each egg with sausage meat and very little flour if meat is sticking to the hands
Roll the meat over the egg , until the egg is completely covered with the sausage meat.

 

STEP 4.

Break the raw egg, whisk it and set aside.

 

STEP 5.

Now deep the meat covered egg into the raw egg, making sure that the meat covered egg is covered with the raw egg.

 

STEP 6.

Then  dip  the egg  covered in sausage into the bowl with the breadcrumbs and roll the egg in it, until the egg is completely covered with the bread crumbs.
Repeat the exact process for the remaining eggs and set aside.

 

STEP 7.

Now, heat up the vegetable oil on medium heat and  and fry the scotch eggs in hot oil till brown and crisp allowing sufficient time for sausage meat to cook through.
Then transfer unto a sieve lined with paper towels.

 

Now to Serve 

you could eat them either warm or cold. you could also serve at functions to your guests. Kids love it.. Adults love it too….

 

 

And that’s how we make Scotch egg …If it looks  anything like the photo in this post then well done…. and if it does not its the first of many trials… don’t give up….

 TIPS:

  • Boil the eggs, then quickly scoop into iced water. Soft or hard boil them according to your preference.
  • Pour the oil in a deep, heavy-based pan, to no more than one third full.
  • Use a frying basket if you have one and cook for 5 – 10 min depending on the size of the Scotch egg.
  • Turn gently, using a slotted spoon, to cook and color evenly.
  • alternatively, you could  also get quality sausage meat by buying some really lovely sausages, slit them open, then squeeze out the meat.

PUFF PUFF(Spongy Snack)

Puff  Puff is that spongy, deep-fried, Nigerian snack that we love.

I have eaten enough puff puff from my mum’s kitchen to last me a lifetime to be honest, but still I cant get enough… I love having them plus they are easy to make.

I’d say Puff puff is kind of a doughnut but not exactly a doughnut.. that’s how I describe it.

Puff-puff is made of dough and  is then deep fried in vegetable Oil until  it turns golden brown.

WHAT YOU WILL BE NEEDING (INGREDIENTS)

  1. 300g of All purpose flourFlour
  2. 50g of sugarSugar
  3. 1/2 teaspoonful of yeast.yeast
  4. Nutmeg (optional)Nutmeg
  5. Lukewarm water (for mixing)water
  6. Vegetable Oil (for frying)vegetable Oil

 

 

METHODS &PREPARATION.

 

STEP 1.

Sift flour into clean bowl.add the ground nutmeg, powdered yeast, sugar and salt. Mix all of these together.

STEP 2.

 

Add water in small quantities and mix everything by hand till you have a good blend of all the ingredients.  Use warm water to mix the puff puff ingredients.

STEP 3.

Keep mixing till the batter is smooth but not too watery to flow from a spoon. The mix should be somewhat thick.

STEP 4.

Cover the bowl with aluminum foil  or a napkin and make sure it is airtight  and leave to rise for 45 minutes to an hour.

STEP 5.

At this stage, the Puff Puff batter should have risen in quantity and will have some air bubbles.

STEP6.

Now Pour some oil in a deep pot and allow to heat up. Test that the oil is hot enough by putting a drop of  the puff puff batter into the oil. If it sizzles and comes up to the surface of the oil, then the oil is hot enough to begin frying.

STEP 7.

Now that  the oil is hot enough, scoop some batter into the oil with your hand by pressing the batter to come out from between your thumb and index finger(it is totally up to you what size you prefer). Put in enough scoops of the batter, as much as the space in the frying pot will allow without overcrowding.

STEP 8.

Once the underside of the puff puff has turned golden brown,(this should take about 5 minutes) flip the ball so that the topside will be fried as well.

STEP 9.

When both sides are golden brown, take out the puff puff balls and place in a sieve lined with paper towel to soak up the excess oil.

 

And that’s how we make puff puff … you could eat them either hot or cold. you could also serve at functions to your guests. Kids love it.. Adults love it too….

TIPS:

  • After frying, puff puffs can be rolled in sugar. kids love the extra sugar..
  • The oil  in the pan should be at least 3 inches deep.

SEA FOOD OKRO (okra)

Today i bring to your kitchen an Okro recipe….. Sea food Okro precisely….

Okra pods also known as” lady’s fingers” are one of the widely used vegetables in tropical countries. Chopped grated, or sliced, they can be stewed or fried. They can also be mixed with other vegetables, rice, or meat.

In the Caribbean islands, okra is cooked and enjoyed in soup, often with fish.

First, let ‘s start off with the Nutritional Facts of eating Okro.

Health Benefits of Eating OKRO(OKRA)

  • It contains potassium, vitamin B, vitamin C, folic acid, and calcium.
  • It’s low in calories and has a high dietary fiber content.
  • The high amount of folate contained in the okra is beneficial for the foetus during pregnancy. Folate is an essential nutrient which improves the development of the foetus’ brain.
  • It contains vitamin K, which is important for bone health and plays a major role in blood clotting.
  • It can help stabilize blood sugar levels by slowing its absorption from the intestines.

 

How could we not love us some Okro… Okay lets get to this recipe Already…

 

 

WHAT YOU WILL BE NEEDING (INGREDIENTS)

  1. ½ cup palm oilpalm oil
  2. 1 Tablespoon Tomato pastetomatoe paste
  3. 2 Tablespoon  ground Crayfishground cray fish
  4. 2 ½cups freshly chopped okrochopped okro
  5. Seasoning Cubesseasoning cube
  6. 2-3 Cups  of Seafood of choice (shrimps/ prawns, crab,fish)sea food
  7. 1 dry fishsmoked fish
  8. 1 bunch of spinach, kale or ugu leaveschopped spinach
  9. 1 bell pepperbell pepper
  10. 3-4 Habanero peppers ( ata-rodo)habanero pepper
  11. 1 tbsp dry pepper or chili flakes(optional)chilli flakes
  12. 1/2 Onion bulb (optional)onion bulb
  13. 2-3 cups of Waterwater
  14. Salt to tastesalt

 

 

 

METHODS &PREPARATION.

 

STEP 1:

chop the okro and set aside.

STEP 2:

Clean and Season your desired sea food ( crabs, fish,shrimp,calamari, prawn) with salt and the dry or black pepper and then set aside.Steam on very low heat and Gently remove the seafood from the stock and set aside. ( preserve the stock for the next step)

STEP 3:

In a blender, roughly blend the bell peppers along with the hot peppers and set side.

STEP 4:

Place a pot on medium heat and add in the palm oil.  Leave for 2-3 minutes.Heat the oil don’t necessarily bleach the oil.

STEP 5:

Now add the pepper mix and a teaspoon of  tomato paste into the oil. Stir. Add the crayfish powder and 2 cups of water. Simmer for  about 15minutes.Then Add  your preferred seasoning  and salt into the boiling mixture. Stir, taste and adjust your seasoning.

STEP 6:

Now Pour just enough  of the stock  from STEP 2 into the pepper mix  and stir. Bring to a boil and cook for about 3-5 minutes.

Then add the chopped okro and dry fish, then reduce the heat.  Do not over cook the okro. cook for only a few minutes so the okro does not loose it’s color and crunch.

Add  in the parboiled seafood  and  your preferred  green leaves  then Stir  and Season to taste and set aside. Simmer uncovered for another 3 minutes.The steam in the soup will cook the vegetables .

And that’s it… we are all ready to enjoy our meal. this could be served as a soup by it self or enjoyed with swallow ( pounded yam, eba, amala or any other accompaniment) or  with oats  (see the oat meal recipe here)

TIPS:

  •  This is  an easy  dish to make but you have to get each component of the dish right before putting it all together. Make sure your seafood is well seasoned so it  tastes great when it all comes together .
  • Try to boil or steam your fish on low heat as boiling fish on high heat hardens the flesh and you loose its nutrients.
  • Do NOT put a lid on once the okro has been put  in the pot to cook.
