GIZDODO (gizzard and fried plantain sauce)

I have an interesting Recipe for you all today,  and it is called “GIZDODO”.

Gizdodo is a unique dish synonymous with Nigerians.

This dish is simply a mix of plantain and gizzards (preferably chicken )with the best garnishing.

It is also known as Gizzards and dodo but i guess that name did not stick hence the Gizdodo ..lol!!.

we should get to this interesting Recipe already right!!….

WHAT YOU WILL BE NEEDING (INGREDIENTS)

 

  1. chicken gizzards.chicken gizzard
  2. ripe plantain.ripe plantain
  3. Fresh tomatoes.tomatoes
  4. Habenero pepper (Atarado).habanero pepper
  5. Red bell pepper (Tatashe).bell pepper
  6. Green pepper.green pepper
  7. Onions.onion
  8. Garlic clove/garlic powder (optional).garlic
  9. Curry, thyme and seasoning stock.seasoning
  10. Salt to taste.salt
  11. Vegetable oil.vegetable Oil

 

METHODS &PREPARATION.

 

STEP 1.

Boil your gizzard using the chicken broth and your preferred seasoning.

 

STEP2.

Chop your plantain into cubes and then fry and set aside.

 

STEP 3.

Slice Habanero and Red bell pepper and set aside.

 

STEP4.

Heat vegetable oil on the stove, add chopped onions and sliced vegetables.

 

STEP 5.

Add Salt, curry , thyme,salt, garlic and seasoning.

 

STEP 6.

Now add gizzard to the sauce and allow the spices to blend in with the gizzard for a minute.

 

STEP 7.

Add your fried plantain sliced green pepper, tomatoes and onions. mix thoroughly and remove the heat.

TIPS

  • I always add Cameroon pepper to my dish , just enough to bring the spices alive. (This is totally up to you)
  • You could  also use Turkey or whatever gizzards you prefer but chicken gizzards just does it right.

WHAT YOU WILL BE NEEDING (INGREDIENTS)

  1. 1 Celery Stick
  2. 300g Carrots
  3. 150g green grapes
  4. several large  sprigs of Parsley.
  5. celery or carrot sticks to serve.

 

METHODS &PREPARATION.

  1. Roughly chop the celery and carrots.
  2. Push half of the celery, carrots and grapes through a juicer , then add the Parsley Sprigs.
  3. Add the remaining celery, carrots and grapes in the same way and juice until thoroughly combined.

 

TO SERVE

Pour into glass an serve with celery or carrot stick stirrers.

Agege Bread Suya Burger

Today Recipe is pretty interesting and adventurous  and very Nigerian too..

Let’s Begin with SUYA and what it is for those who do not know.

Suya is a spicy shish Kebab(skewered meat) which is a popular food item in West Africa.

Suya is generally made with skewered beef,ram, or chicken. Innards such as kidney, liver and tripe are also used.The thinly sliced meat is marinated in various spices which include  salt, vegetable oil, and it is then barbecued.

Suya is  then served with further helpings of dried pepper mixed with spices and sliced onions.

Now, Agege bread on the other hand  is  simply a popular type of Nigerian bread that is loved by many.

The combination of the above with a little vegetable and spice makes the most amazing burger ever……

WHAT YOU WILL BE NEEDING (INGREDIENTS)

  1. Agege Bread ( buy from your vendor)agege bread
  2. sticks of suya ( your choice of suya)suya
  3. Fresh Tomatoestomatoes
  4. 1 medium  size Oniononion
  5. 1 medium size cucumbercucumber
  6. 8 slices mozzarella cheese.cheese
  7. Salad dressing or cream.salad dressing
  8. Lettuce leaves.lettuce

 

METHODS &PREPARATION.

 

STEP 1.

Slice bread in two and place in preheated oven for approximately 3 minutes.

STEP 2.

Slice vegetables into rings.

STEP 3.

Separate the suya from the sticks and set the suya beef aside.

STEP 4.

Now place the cheese on the  bottom bit of the bread which should be hot enough now and then  add the vegetable on. pile on the vegetable and suya and alternate whichever way you best prefer.

STEP 5.

Finally,spread the salad dressing in between the vegetables and suya and now cover the deck with the top half of the bread.

PINEAPPPLE AND GINGER JUICE

We are talking Juices today… healthy, refreshing  Pineapple and Ginger Juice.

Fresh root Ginger is one of the best natural cures for indigestion and it helps to settle upset stomachs, whether caused by food poisoning or motion sickness.

WHAT YOU WILL BE NEEDING (INGREDIENTS)

( this serves 1)

1/2 Pineapple

25g Fresh Root Ginger

1 carrot

Ice Cubes(optional)

 

METHODS &PREPARATION.

  1. Using a sharp knife, cut away the skin from the pineapple, then halve and remove the core. roughly slice the pineapple flesh.
  2. Peel and roughly chop the ginger.
  3. Chop the carrot into chunks.
  4. Put the carrot, ginger and pineapple through a juicer and pour into a glass.
  5. Add ice cubes if desired and serve immediately.

I bring you all My mama’s Doughnut recipe….. I think we had doughnut to school  everyday…. Back then I loved mine with Sugar all over it, that has since changed though…

we should get to the Recipe already right!!….

WHAT YOU WILL BE NEEDING (INGREDIENTS)

  1. 1  cup Milk.milk
  2.  (1/2 stick) unsalted butter, melted.IMG_4827
  3. 2  spoons instant yeast.IMG_4829
  4. 1/3 cup warm water (95 to 105 degrees F).water 2
  5. 2 eggs, beaten.egg 2
  6. 1/4 cup sugar.sugar
  7. 1/2 teaspoons salt.salt
  8. 1 teaspoon freshly ground nutmeg.nutmeg
  9. 2 cups all-purpose flour, plus more for dusting surface.flour 2
  10.  vegetable oil, for frying (1 to 1/2 gallons)5 cups.cooking oil

 

 

 

METHODS &PREPARATION.

STEP 1.

Place the milk in a medium saucepan and heat over medium heat just until warm enough to melt the butter. Place the Butter in a bowl and pour warmed milk over. Set aside.

In a small bowl, sprinkle the yeast over the warm water and let dissolve for 5 minutes. After 5 minutes, pour the yeast mixture into the large bowl of a stand mixer or a bowl to whisk with your hands.

STEP 2.

In a small bowl, whisk together the milk and the egg.(make sure the milk is lukewarm )

STEP 3.

In a separate medium bowl, whisk together the flour, sugar, baking powder,yeast and salt. Stir the milk-egg mixture into the dry ingredients.Add the eggs, sugar, salt, nutmeg, and half of the flour

STEP 4.

then stir in the melted butter, mixing until a soft dough forms.Let the dough sit.

STEP 5.

Transfer to a well-oiled bowl, cover, and let rise for 1 hour or until doubled in size.

On a well-floured surface, roll out dough to 3/8-inch thick. Cut out dough using a 2 1/2-inch doughnut cutter or  a kitchen knife  Set on floured baking sheet, cover lightly with a tea towel or a Napkin, and let rise for 30 minutes.

STEP 6.

Preheat the oil in a deep fryer or Dutch oven to 365 degrees F.There should be at least 2 inches of oil in the pot and at least 2 inches between the top of the oil and the top of the pot.)

STEP 7.

TO MAKE THE DOUGHNUT RING: take the  cut out dough and with your finger maker a ring in the middle and expand and roll until you have a nice hole . You could also cut with a round, sharp doughnut cutter (about 3″ diameter).

Gently place the doughnuts into the oil, 3 to 4 at a time. Cook for 1 minute per side. Using a slotted spoon, transfer the doughnut holes to the paper towel-lined baking sheet.Serve immediately.

STEP 8.

Alternatively, you could shape your doughnuts without the holes/rings…. it is entirely up to you.

TIPS

  • The dough expands when fried, so 1 tablespoon of batter will yield about a 2-inch doughnut hole. If you prefer smaller doughnut holes, drop about 1 teaspoon of batter into the oil.
  • The roundness of the doughnut holes depends on how clean of a scoop of batter you drop into the hot oil.
